If you’re like ME and you aren’t specifically drinking celery juice as a result of you like it most (let’s be real United Nations agency really enjoys celery juice? nobody.) then this is often the salad direction for you. This straightforward Basic salad direction while not Celery can offer you all the flavour you like during a healthy chicken salad. simply many ingredients and you most likely keep them on hand!
One of my friends makes a salad direction terribly kind of like this. we tend to created it per annum once we’d visit the beach thus salad simply jogs my memory of days by the beach wherever you eat a sandwich and chips and luxuriate in the sounds of the surf. I further some Dijon to mine for extra tang, however one issue I forever detected concerning hers is that she doesn’t place any celery in it.
Ingredients
- 2 large Chicken Breasts
- 1/2 cup Mayo I like olive oil or avocado oil mayo.
- 2 tbsp. Dijon Mustard
- 1.5 tbsp. Sweet Pickle Relish
- 3 tbsp. Onion chopped
- Salt to taste
- Pepper to taste
Instructions
- Trim your chicken breasts. Cover the outside with salt and pepper. Put them in a Pressure Cooker (Instant Pot is what I use) for 12 minutes on high pressure and allow a 10 minute natural release. You can also skip this step and use rotisseree chicken or any kind of pre-cooked chicken you have on hand.
- Put the chicken, onion, and pickle relish in a food processor. Pulse until well incorporated. You don't want to puree the chicken here so just pulse until the chicken is finely ground, but still has shape.
- Pour the chicken into a bowl and add the mayo, mustard and a dash of salt and pepper. Stir it together and taste for seasoning. Add more salt and pepper as needed. Serve on a croissant or a few slices of whole grain bread as shown. Store leftover chicken salad in the fridge for 3-4 days.
