Hawaiian Guava Cake

If you don’t have or can’t locate strawberry cake blend, you may always use white or yellow cake blend as a substitute. i love the use of the strawberry as it complements the guava taste but either of these other flavors work too. you may also change out the coconut oil for canola or vegetable oil if you would really like as nicely. Ingredients

  • 1 pkg. strawberry cake mix
  • 1 1/3 c. guava nectar or guava juice
  • 3 eggs
  • 1/3 c. coconut oil room temp (liquid)

For the Cream Cheese Layer:

  • 8 oz. cream cheese softened
  • 1/3 c. sugar
  • 1 tsp. vanilla
  • 8 oz. Cool Whip thawed

For the Guava Gel Topping:

  • 2 c. guava nectar or guava juice
  • 1/2 c. sugar
  • 1/4 c. cornstarch
  • 3 Tbsp. water

Instructions

  1. In a mixing bowl, mix together cake mix, guava juice, eggs, and coconut oil until well combined. 
  2. Bake in a 9x13 glass baking dish according to cake mix package directions. 
  3.  In a medium mixing bowl, beat cream cheese with hand mixer until fluffy. 
  4. Add sugar and vanilla and mix well. 
  5. Slowly fold in the Cool Whip and refrigerate until ready to use. 
  6. In a medium saucepan, bring the 2 cups guava juice and sugar to a boil. 
  7. Make a slurry out of the cornstarch and a small amount of water.
  8.  Remove guava juice from heat and stir in the cornstarch mixture. 
  9. Return to heat and bring back to a boil and boil for one minute. Cool in refrigerator.
  10. When cake has cooled, spread cream cheese mixture evenly over cake.
  11. Glaze the top of the cake with guava gel. Refrigerate until ready to serve.
