These Cherry Coca-Cola Jelly (Jello) cubes are fast, fun and are ideal for a picnic, the match, or just as associate degree surprising treat. - 480ml (2 cups) cherry coke
- 28g (4x 7g envelopes) unflavoured gelatine
- 4 tbsp granulated sugar
- 1 tsp cola extract, optional
- ½ tsp cherry extract, optional
DIRECTIONS:
- Line a 9-inch baking pan with 2 layers of foil, leaving an 1-inch overhang (for ease of removing). Measure the coca-cola into a large jug.
- Put the unflavoured gelatine in a mug with the sugar and pour around ½ cup of coca-cola onto the gelatine/sugar mixture. Stir with a spoon and heat in the microwave for 30-second burst stirring after each burst until both the sugar and gelatine have completely dissolved.
- Pour the gelatine mixture into the jug with the coca-cola and stir. It will froth quite a bit.
- (Optional) Add the cola and cherry extracts and taste test to see if you’d like to add a little more. I found the mixture to taste a little bland without, oddly. I’d definitely recommend adding them.
- Pour into the prepared pan. Allow to cool, then transfer to the fridge to set completely.
- Once set, gently remove the jelly by lifting the foil overhang, gently easing with your fingers and place on a flat work surface. Use a large knife to cut into cubes.
- If not serving immediately, store in an airtight container in the fridge.
