INGREDIENTS:

  • 1/4 pound bacon, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups raw long grain white rice, washed and drained several times
  • 3/4 cup water or chicken broth
  • 2 cups canned crushed tomatoes
  • 1 stalk celery, diced
  • 1/2 teaspoon hot sauce
  • 1 teaspoon garlic salt
  • 1/4 teaspoon black pepper

INSTRUCTIONS

  1. Preheat oven to 350 degrees. In a large frying pan, fry bacon until crisp. Remove bacon and set aside.
  2. Over medium heat, add onion to the bacon drippings, and fry until tender, about 4-5 minutes.
  3. Stir in the rice to combine. Then add the water or broth, tomatoes, celery, bacon, hot sauce, garlic salt and pepper. Cook for 10 minutes.
  4. Pour rice mixture into a casserole dish and cover with aluminum foil.
  5. Bake for one hour. Remove from oven, fluff rice with a fork and serve!
