INGREDIENTS:

  • 1/2 pound Chorizo, casing removed
  • 1 small Onion, diced (about 1/2 cup)
  • 1 cup Bell Pepper, diced
  • 2 Potatoes, diced into cubes (about 2 cups) - I used 5 Medium Red Potatoes
  • 1 tsp Kosher Salt
  • 1/4 tsp Pepper
  • Sour Cream, optional

DIRECTIONS:

  1. In a large skillet over medium high heat brown chorizo sausage, breaking up with a wooden spoon or spatula as it cooks.
  2. When chorizo is cooked through, about 5-7 minutes, add in the onion and bell peppers. Cook until onion and bell pepper has softened, about 7-10 minutes.
  3. Add in the potatoes to the skillet, sprinkle with salt, and pepper.
  4. Continue to cook hash, stirring frequently, for about 20 Minutes, or until the potatoes are softened. Serve immediately.
  5. *optional* Serve with sour cream if desired
