Pineapple Lump Slice

This is such a delicious and decadent instruction – however straightforward and fast to make! Pineapple Lump Slice could be a definite should attempt.  No bake slices are perpetually a success, they're thus straightforward to form, no fussy techniques Associate in Nursing undoubtedly delicious. There are many brands currently that build pineapple lumps, thus you'll simply obtain some baggage within the supermarkets.


Ingredients

  • 280 grams Pineapple Lumps, 2 bags, Frozen (including half cup for topping)
  • 1 x 250g packet Malt Biscuits
  • 125 grams Butter
  • 1 Cup Condensed Milk – 300g (nearly a whole tin – but not quite, use the rest for salad dressing!)
  • 190 grams Milk Chocolate
  • 1 teaspoon Oil (optional)

Instructions

  1. Freeze the 2 Bags of Pineapple Lumps overnight or until hard
  2. Line a slice tin (or 25cm square cake tin) with baking paper and set aside.
  3. Crush the biscuits in a food processor, you can also pulse the pineapple lumps in here as well but I prefer to chop them by hand for bigger chunks - but this way quicker!
  4. Cut the frozen Pineapple Lumps into small pieces (you can reserve half a cup for the topping if you desire)
  5. Melt the butter and condensed milk in a large saucepan on low heat until melted and mixed together well, alternatively do this step in the microwave.
  6. Pour the pineapple lumps & biscuits mixture into the butter/condensed milk mixture and combine well
  7. Spoon the biscuit mixture into the slice tray and press down very firmly using the back of a large spoon or clean hands until tightly packed and smooth.
  8. Melt your chocolate in the microwave with 10-20 second bursts, stirring in between until completely melted or you can use a double boiler.
  9. If using add a teaspoon of oil to the melted chocolate and blend well
  10. Pour the chocolate onto the slice and using the back of a spoon spread chocolate evenly over the slice.
  11. Give the slice pan a jiggle to settle the chocolate evenly
  12. If you reserved some frozen pineapple lumps, slice into small pieces sprinkle these over the top of the slice
  13. Place in the fridge for at least two hours (preferably overnight).
  14. Take the slice out of the fridge and leave for 20 minutes before slicing (this way your chocolate will be less likely to crack).
  15. Cut the slice into squares.
  16. This slice will keep in an airtight container in the fridge for at least 5 days (but lets face it – it won’t last that long anyway!)
